Ok, I’m getting into internet dad mode here. So caveat scrollar. Or something.
First, unlimited time off is designed to make people not take time off. Few people will admit it. I’ve been in the ivory tower and know it’s true. So be sure you have that context in mind.
Next, your ability to contribute to your company and support your coworkers is tied to how clearly you can think, how well you can handle stress, your ability to interact with people, and your ability to learn. The longer you burn your candle without a break, the less effective you are at all those things and the less valuable you are to the team.
My recommendation is to take time off intentionally and regularly - take a look at what is industry standard - say 4 weeks per year and you take one week each quarter and disconnect and do something different.
I also recommend finding something that is fundamentally different as a hobby that you do on nights and weekends. Volunteer somewhere to hand out food or go to the local animal shelter and pet cats and dogs for 4 hours every Saturday and so on.
These will help keep you balanced and let you operate more effectively.
Next, before I was promoted to an executive, I had been an occasional manger for a long time but mostly an individual contributor. I had a manager that gave me some advice that I’ll give you (and anyone else reading this): operating in hero mode (or fire fighter mode or however you want to say it) will only serve to keep you in that role because the company has gotten so dependent on your heroics that it can’t afford to let you move to something new (but they’ll still drop you like a hot potato if times get rough). Real value to the company comes from helping to orchestrate others - raise them up, challenge them, make them work the oars in the boat by themselves while you’re not there. Said another way, it feels like you’re helping your coworkers and company if you are always there, but the opposite is true.
Finally, I had a discussion with the CEO of IBM once after I was promoted to an executive. They do this executive retreat where they issue the corporate lobotomy for new executives. She told me that I have to look out for me, because the company isn’t going to do it, and if I’ve burned myself out or driven my health into the ground, it’s bad for me and my future and bad for the company.
So take the vacation. Push your coworkers out of the nest and make them fly while you’re away.
Note: I didn’t always take this advice for a variety of reasons and I’m still recovering from burnout 18 months later and out of work.

One thing that someone once said and that stuck with me: 'if you can't get replaced, you can't get promoted'. Be important and add value but not at the cost of being irreplaceable.

again, +1000%, @jerry. unlimited time off is a scam to reduce the liability of unused vacation on the books and a solid gamble that most folks won't take as much as they would if it were "vacation".
if you have vacation, it's not a savings program. getting a check for unused vacation won't heal you. take the vacation. take it in real chunks too. you won't unwind in 3-4 days.
it was amazing how much better i felt when i started taking at least 2 10-12 day vacations with no work at all per year. and that would be considered criminally little time off to anyone in EU.

I agree 100%. I tell my teams that the company will take whatever they give. They need to set boundaries.
I also nag them for when their next vacation is because we all need something to look forward to.

My first job after graduating college the new VP for Information Systems said something in his introduction talk to the department that has stayed with me ever since. He said “Never be the indispensable employee, you never get to take vacation or advance to a new position. Don’t gatekeep knowledge, mentor others, and document what you do so that you can easily move to something new.” This has served well for decades. It has even afforded me job opportunities when mentees have moved to other companies.
